Double apple cake

Ingredients:

(glass - 250 ml)

For dough:

1 egg
1 Art. of flour
2 tbsps are swept away (or 3 tbsps of fat cream)
1/3 tsps of salt
1 tbsps of the kindled desi

For stuffing:

6-8 averages of firm apples
~ 1 Art. of sugar (or it is slightly less)
100 g of the kindled desi
icing sugar for ornament

Preparation:

1) To mix egg and sour cream in small bowl, then, gradually, adding sifted flour, to knead manually dough - it has to turn out quite abrupt, but elastic. To cover with towel and to leave for 20-30 minutes.
2) To remove core from apples, to cut thin segments. To oil split mold (diameter of 20-22 cm), on bottom to lay paper for pastries.
3) To divide dough into 4-6 parts. On the powdered flour of land surface to roll each part of dough in thin layer by the size of your form.
4) To lay out the first layer of test for form bottom, to oil kindled (~ 25 g). To lay out part of the cut apples on all surface of dough. To sugar. In the same way to lay out other layers. From above there has to be layer of dough oiled.
5) To warm oven to 190 °C. To bake pie about 30-40 minutes. The crust from above has to be reddened. To give, having strewed with powder.

Ingredients:

for the Yufka test:
250 ml. wheat flour (10% of protein)
250 ml. wheat flour (at least 12% of protein)
?-1 h. l. salts (to taste)
250-270 ml. warm water
vegetable oil (olive EV)

for stuffing:
350 g of cottage cheese (like Adygei)
150 g of Feta cheese
3 tbsps of chopped parsley (greens to taste)
black sprinkling pepper
250-300 ml. warm milk
50-60 g of the kindled cooled desi
1 big egg

Preparation:

In deep ware to mix flour with salt, thin stream, gradually pouring in water, to knead dough. To divide dough into 5 parts (1 part has to be a little more other parts), to roll in spheres, to oil each part vegetable, to cover with food wrap and to set aside for 40 minutes.
To roll the most part of dough in circle with a diameter of 30 cm, other 4 parts of dough in circles with a diameter of 20 cm. To lay land surface big cotton napkin. Slightly to strew with flour. Hands to stretch bigger circle from dough to the size ~ 60 cm in the diameter (to roll dough with long rolling pin to thickness about 1 mm). To stretch other dough (to roll) in circles with a diameter of 35-40 cm. To cut the reinforced edges. To put sheets of rolled dough at each other and to cover with napkin.
By means of fork to crumb cheese. To shift in deep ware, to add chopped greens, black pepper, to mix. In small ware to mix milk, butter and egg. Slightly to shake up nimbus to homogeneous consistence.
To warm oven to 200 degrees of C. Carefully to grease bottom and walls of form (diameter of 26 cm) with desi. To lay out circle of test of the bigger size in form, having covered bottom and walls of form (edges of dough have to hang down from edges of form).

To inwrap the hanging-down edges of the lower part of dough to the middle, having completely closed upper layer of stuffing.
To grease top of beet with the remained egg mix and to put in oven. To bake within 40-45 minutes till golden color.

Bugatsa with cheese

Bugatsa – double cake, widespread in Northern Greece, with stuffing from custard or cheese, is more rare – mincemeat or spinach.

Ingredients:

For dough:
1 glass of olive oil
1 tsps of salt
3 tbsps of sugar
2 tbsps of vinegar of 6%
2 vitelluses
1 glass of water
7 glasses of flour
100 g of desi

For stuffing:
750 g of sheep cheese
100 g of the kindled desi
2 eggs

Preparation:
To prepare dough (it is possible to take 500 grams of ready dough fit). In bowl to mix olive oil, salt, sugar, vinegar and vitelluses. To fill flour on land surface hill. In the middle of hill to make deepening and gradually to pour in egg mix. To knead dough, having added water at the end of batch. To cover with towel and to allow to stand half an hour. To mix all ingredients for stuffing.
To divide dough into four parts, to roll each part as it is possible is thinner. Baking dish to oil, lay out one layer of dough and to cover it with the kindled desi. From above to put one more layer of dough and stuffing.
From above to lay out the third layer of dough, to oil and place from above the last layer of dough. To connect upper layers with lower to close to bugayets. Once again to oil. To bake pie in warmed to 180 degrees oven approximately for 45 minutes.

1 egg, 100g the softened desi, 100g sour creams, 1 tbsp of sugar, pinch of salt to mix and gradually to add 350g torments. To knead dough, to roll in sphere, to roll up in food wrap and to send to the refrigerator for 30 minutes.

Apples to clear and cut with segments.

5st.l. sugar to mix with 1 tbsp of cinnamon.

To cut dough in half, then to cut one of parts on 2 equal half, and the second on one it is more, one it is less.

We take the most most part of dough and we roll in thin layer to put in form 25sm in the diameter and to lay out high boards. Boards are very important here because the stuffing strongly flows. I even would advise not to use split mold, and that oven then will not wash.
That dough did not stick, to oil hands, rolling pin and land surface the vegetable.
On dough we spread 25g sl. oils, 1/3 apples, we strew 1/4 sugars with cinnamon, we water 3st.l. concentrated milk.
Further we roll two middle parts of dough, too we create sides, we put the same stuffing. The last, small slice of dough is rolled, we put from above, we pinch all boards, we display 25g sl. also we strew oils with the remained sugar with cinnamon. We do some punctures by knife that liquid was evaporated.
In oven for 40-50 minutes at 200 degrees.
Time for pie leaves, of course, more, than on charlotte. But very tasty it turns out! And not always to be only to charlotte ;)

Ingredients:

1 egg.

Preparation:

Oil previously to soften or rub on large grater. From all ingredients to knead dough and to put for about 30 minutes in the refrigerator.
Cottage cheese to wipe, mix with sugar and egg.
To divide dough into two parts. To roll one part by the size of form and to lay on it cottage cheese stuffing. To roll the second part of dough and to cover from above.
Dough quite elastic is also rolled by us is quite thin. To transfer the rolled layer to form, it is necessary to work still. But I do etotak: slightly I prisyvat flour that did not stick together, quickly, but accurately I wind on rolling pin and also quickly I roll in form.

1-2 tablespoons of lemon juice
100 gr. raisin
75 gr. chopped almonds
50-70 gr. the kindled desi
1 h. cinnamon spoon
70-100 gr. sugar
icing sugar for topping

From the specified products to knead smooth dough, to create it in sphere, to oil vegetable, to cover, leave for 1 hour.
Apples to clear and cut with small cubes, to mix with almonds, raisin, cinnamon and lemon juice.
To heat oven on 200 degrees, to lay the oiled parchment.
Once again to vent dough (without flour), several times to beat off about table.
At first to roll a little dough on table, then to transfer to the fabric strewed with flour to roll thin layer, dough has to be illuminated practically, to cut the edges.

0,5 tsps of nutmeg
1 tsps of lemon juice
2 tbsps of sugar (for topping)

Preparation:

1. To sift flour in bowl together with salt and sugar. To add the cold oil cut on small cubes, to chop up knife in crumb. To add water, to knead knife dough. To divide it on two Koloboks (bigger and smaller) and to inwrap everyone in film. To send to the refrigerator to half an hour.

2. To peel apples of skin and sunflower seeds, to cut on small slices. To mix apples in bowl together with spices, sugar, lemon juice and starch. To set aside.

3. To get dough from the refrigerator, to allow to thaw a little. To roll on the strewed surface flour bigger Kolobok and to transfer to the oiled form (edges of dough have to hang down from form). To lay out stuffing, to put on it desi slices. To roll the second Kolobok and to cover stuffing. To zashchipit edges of dough, and in the middle to make hole, for steam-out.

4. From above to grease pie with water and to sugar. We put in the oven warmed to 220C. In 10 min. we reduce temperature to 180C and we bake 40-50 min., before formation of golden crust. Completely we cool and we enjoy yum-yum.
