Gagarin pie

Gagarin pie

Pie history: Tell that when after the flight in space Gagarin has arrived to Poland, have treated him with this pie there. Gagarin was in such delight that since then in Poland this pie call Gagarin's Pie.

Ingredients:
Flour (in dough) — 2,5 stak.
Soda (in dough, without top) — 1 h. l.
Salt (in dough, pinch)
Desi (or creamy margarine, in dough) — 200 g
Egg (yolks - in dough, proteins - at stuffing) — 4 pieces
Sugar (in dough - 0,5 stak., in stuffing - 0,5 stak.) — 1 stak.
Cocoa powder (in dough) — 1 tablespoon.
Confiture (or jam, in stuffing, acid)
Potato starch
Icing sugar (for topping)

Preparation:
To sift flour with soda, to add the cooled oil cut on slices. Hands to pound in homogeneous small crumb. To add salt.
To pound yolks with sugar until white.
Both weights to connect and knead dough. (yolks with flour)
To divide dough into three parts. To add cocoa to one part and to knead. To clean one white part in the refrigerator, another white and black - in deep freeze not less, than for hour.
To grease form. To lay out the first white part (from the refrigerator), to knead on all surface, having made low side (1 cm). Repeatedly to pin fork.
It is good to grease with any jam or confiture, it is better kislenky (I have currant jam), slightly to powder with potato starch.
From above evenly to rub black part of dough on large grater.
To beat whites in stable foam with sugar to taste (half-glass or it is more).
Evenly to put whites on pie, and over proteins evenly to rub on large grater white part of dough from the freezer.
To put pie in warmed to 180*C oven. To bake about 40-45 minutes.
Ready pie to take out, allow to cool down a little in shape, then to take and cool finally. From above to strew with icing sugar.
