The champignons stuffed with avocado with shrimps
The idea of this original snack belongs to the Portuguese chef of Enrique S Pessoa.
That is necessary:
• 12 small champignons
• 1 avocados
• 2 tbsps of lemon juice
• 1 tbsps of the tomatoes which are small cut
• 2 tbsps of fat yogurt or cottage cheese cream cheese
• 2 tsps of soy-bean sauce
• 12 shrimps
• ? hot red peppers, cut on circles
• arugula for ornament
• salt, pepper
Way of preparation:
At champignons cut off legs.
Shrimps clear of armor and black vein and boil in the boiling water within 2-3 minutes. Merge water and wash out shrimps baking plate stream of cold water.
Peel avocado of peel and stone. Put pulp in bowl and water with lemon juice that has not darkened. Mash avocado fork, add tomatoes, yogurt, soy-bean sauce, salt and pepper. Stuff champignons with the received forcemeat, from above put some branches of arugula and shrimp, add paprika circle.
