Beef tongue with horse-radish — is classics of genre. And if to connect horse-radish to sour cream, basil, parsley and walnuts, very delicate sauce which is harmoniously combined with delicate taste of boiled tongue will turn out.

Ingredients:
Neat's tongue — 1 piece.
Onions — 1 piece.
Celery — 1 stalk
Carrots — 1 piece.
Bay leaf — 2 pieces.

Gelatin — 1 upak.
For sauce:

Horse-radish (grated) — 2 h. l.
Sour cream (not less than 20% zhirn.) — 100 gr

1. Carefully we wash beef tongue and we place in big pan, having completely covered it with water. There we stack celery, bay leaf, the peeled onions and pepper and we lead up boiling broth. When water starts beginning to boil, we diminish fire to minimum, we remove noise (foam), we salt and we cook about 4 hours, having covered.
2. When language has cooked, we get it from hot broth and we lower in ice water. After that with ya3yka it is husked as glove. We store the cleared language until cutting in pan with broth.
3. As boiled beef tongue has property in open form quickly to zavetrivatsya and darken, jelly makes sense to cover cutting, then it remains glossy and long has fresh appearance. For preparation of jelly it is necessary to take a little broth (about 2/3 glasses) in which language cooked, to bring it to hot state (approximately degrees 70) and to dissolve in it instant gelatin.
