Rulyada stuffed with sauerkraut with gravy

Ingredients:
Beef sirloin - 8 big pieces (thickness about 0,3 cm) weighing 800 g
4 tablespoons of horse-radish
Salt, pepper, paprika
4 thick or 8 tonchy pieces of bacon
To steam of thin rings of onions
Sauerkraut - 240 g to wring out
1 tablespoon of olive oil
Half of big bulb, is thin to cut
Mushrooms - 225 g, are thin to cut
2 glasses of beef cook water
1 glass of dry red wine
8 berries of mozhevelnik, slightly to crush
1 tablespoon of paprika
1 teaspoon of husked parsley
1/2 teaspoons of dried thyme
2 bay leaves
Salt and pepper, if necessary
1,5 tablespoons of starch
3 tablespoons of fat cream

Preparation:
On each piece of cutting smear on half of tablespoon of horse-radish. Powder with salt, pepper and paprika.
Divide bacon and rings of onions between each piece of cutting and from above lay out sauerkraut.
Curtail roll from each piece of cutting, as shown in the picture. Fix everyone thread or toothpick.
Heat oil on frying pan. Fry each rulyada to brown crust, and then shift them in big heavy kastrlyulyu or to utyatniyets with dense cover. It is desirable that all rulyada were located in one row.

Do not wash frying pan. Reduce fire and add if necessary still oils. Fry small cut onions. Lay out it to rulyada together with mushrooms, broth, wine, mozhevelnik, paprika, parsley, thyme and bay leaf. Bring everything to the boil and densely close utyatnitsa cover. Reduce fire and prepare about an hour.
Uncover, turn rulyada on other party and close cover again for hour so far meat will not become soft.
Get rulyada, remove thread or toothpick. From above fill in all with gravy from mushrooms and onions. Bay leaf and mozhevelnik throw out.
Put the remained mix of broth and wine on small fire and cook mix so far not to decrease by third.
Mix starch and cream to homogeneous mass. Add couple of spoons of hot broth and pour in everything back in pan. Stirring slowly, cook for about a minute so far mix will not thicken. Add salt and pepper to taste. Return to utyatnitsa of rulyada, mushrooms and onions. Warm up.
Give everything together with gravy.
