Eclairs
Ingredients:
Desi – 100 g
Water – 300 ml
Flour – 140 g
Egg – 4 pieces
Stuffing:
Milk – 300 ml
Big yolk – 3 pieces
Sugar – 50 g
Starch – 2 tablespoons
Flour – 2 tablespoons
Vanillin – 1 teaspoon
Glaze:
Bitter chocolate – 100 g
Cream – 2 tablespoons
Preparation:
1. Heat oven to 200 C. Lay 2 baking sheets paper and oil. Bring water and oil to the boil. Vsypte flour also stir slowly with wooden spoon before forming of ball of soft dough. Remove from fire. Cool about 5 minutes.
2. Shift dough in bowl for the mixer, hammer eggs, knead dough. Shift it in pastry bag. Squeeze out about 8-10 eclairs on each baking tray, leaving enough place between them. Bake 25-30 minutes. Cool.
3. For stuffing shake up yolks with sugar up to the blendy cream weight. Add flour, starch. Bring milk with vanilla to the boil on small fire. Gradually mix both mixes, being careful of that eggs have not turned.
4. For this purpose for a start in frothed eggs pour in 2 ladles of milk, mix and now pour egg milk mix back to milk. Carefully shake up everything to dense cream. Remove from fire and cool.
5. In microwave heat chocolate with cream at high speed about a minute. Mix.
Shift the cooled-down cream in pastry bag. Make opening in eclairs tablespoon tip.
6. Fill eclairs with cream. Dip them into glaze and let's time to it stiffen.
