Cottage cheese with greens and caraway seeds

Ingredients:

1l kefir
1l milk
6 eggs
4 h. salt spoons (or to taste)
1/3 h. spoons of red hot pepper
caraway seeds pinch
1 garlic glove
small bunch of different greens: fennel, cilantro, green onions

Preparation:

1. In pan to pour out milk and kefir, to put on plate. Without bringing to the boil, to pour thin stream in hot milk and kefiric mix in the eggs which are slightly shaken up with salt. To bring to the boil and to cook this mix, stirring slowly, on small fire some minutes until department of serum.
2. To remove from fire, to allow to cool down 1-2 minutes and to add small crushed greens and the territory pepper, to squeeze out garlic glove (or something on the taste)
3. To pour out weight in the colander covered by the gauze put in 2 layers. To level cheese curd spoon.
4. To twirl gauze node, to allow to flow down to serum. Then to untwist gauze, formed kruglyashok cheese to cover with edge of gauze, from above to lay saucer and to put any oppression on saucer (will approach, for example, bank with water, closed by cover).
