Pie Mimosa (not to confuse to salad)
Ingredients:
For biscuit:
1 glass of wheat flour
1 glass of granulated sugar
3 crystals of vanillin
2 h. l. saffron
2 h. l. vodka
1 h. l. baking powder
desi – 1 h. l.
eggs – 6 pieces
for cream:
egg – 4 pieces
60 g of wheat flour
milk – 1 glass
1 bank of pineapples (200 g)
350 g of granulated sugar
5 plates of gelatin
Caloric content: 332 kcal
for 1 portion
Preparation:
To kill Schafran in vodka and to allow to be drawn. Then to filter.
At 6 eggs to separate the whites from the yolks. To beat whites with glass of sugar to condition of dense foam. To shake up yolks till light yellow color and to connect to proteins. To mix. To add flour glass, the filtered vodka with saffron and vanillin, to mix manually. On baking tray to put the parchment greased with desi. To lay out on it biscuit and to put in the oven which is in advance warmed to 200 degrees. To bake about 20 min. until the biscuit is reddened. To take out from oven, to cover with parchment and to put to cool down at the room temperature.
To separate the whites from the yolks at the remained eggs. To put yolks in small pan, to add 100 g of sugar and 60 g of flour. To mix and then to pour in warm milk. To cook cream on weak fire, constantly stirring slowly and without bringing to the boil until it thickens. If there are lumps, to wipe cream through sieve.
In kastryulka to boil 6 tablespoons of water and to put 250 g of sugar. To stir. To Uvarit syrup to average density. To beat whites to dense magnificent foam. To enter thin stream the made syrup, continuing to shake up.
To connect protein whips to the made yolks. To postpone 4 spoons for registration of pie. To wet 5 sheets of gelatin, to dismiss them on water bath and to enter into egg and yolk weight.
To cut the cooled-down biscuit in half, then to cut each half on 2 plates. Layers should give the form of ware in which the pie will gather: if it round to cut 3-4 circles of the different sizes. To cut offcuts in small cubes.
To put layer of food wrap in form, then - the smallest circle of biscuit. To grease it with cream and to lay pineapples. To put the following layer of biscuit, etc. To put in the refrigerator. When cream stiffens, to take for the ends of film, to take out pie from form and to turn. To grease with cream and to strew with biscuit cubes.
