Eclairs with lemon cream

Ingredients:

For eclairs:
Desi of 100 g
Water of 250 ml
Flour of 170 g
Eggs of 3 pieces
Tsp salt 1/2.
For cream:
2 lemons
Granulated sugar of 200 g
Desi of 50 g
Eggs of 4 pieces

Preparation:

1. In small kastryulka we bring water to the boil, we add desi and salt. We do small fire and we add flour. All the time we mix, bringing dough to homogeneous consistence (about 2-3 min.).
2. We allow dough to cool down a little. We drive in into dough of egg (room temperature) on one, after each egg well we mix dough.
3. We dim baking tray parchment paper. By means of pastry bag we spread dough circles with a diameter of 3-4 cm, at distance of 5 cm from each other (in the course of pastries eclairs will increase in the amount of).
4. We put baking tray with eclairs in the oven warmed to 180 degrees and we bake about 30 min.
5. Meanwhile we do cream. We remove dried peel from two lemons, we squeeze out juice of one lemon and we mix with granulated sugar.
6. Slightly we shake up eggs, we mix them with juice and dried peel, we leave for 15-20 min., and then we filter through sieve.
7. We pour mix in kastryulka, we add desi and we put on average fire. All the time we stir slowly until mix thickens.
8. We leave cream that it has cooled down and has a little more thickened.
9. Ready eclairs it is cut in half, we fill with cream and again we connect.
