Beaters with avocado, salmon and cucumber

Ingredients:

500 g of rice
50 ml of rice vinegar
30 g of sugar
10 g of salt
5 sheets of chain pump
1 long forcing cucumber
1 avocados
200 g of light salted salmon
wasabi
marinated ginger
soy-bean sauce

It is necessary for preparation of beaters:

Bamboo rug (to makis or dry mat). Without it qualitatively it is almost impossible to curtail beater.
Wide nonmetallic capacity for mixing and cooling of rice.
Flat wooden scapula.
Flat dish with water. Rice for sushi very sticky and easily sticks to hands. Therefore in the course of preparation of beaters before taking rice, hands need to be moistened every time with water.

Preparation:
Ready rice is shifted in wide nonmetallic ware, evenly we water with vinegar stock and we start mixing wooden scapula.

We prepare stuffings. The cucumber is cleared of thin skin, we cut out seeds and we cut on thin strips. Too we cut fish on strips

Avocado it is cut in half, we delete stone, we clear of peel and we cut on strips

Rice is displayed on chain pump by layer about 3-5 mm. The edge of palm has done small long fillet in the middle of the spread-out rice. Slightly we grease it with wasabi. We put in fillet stuffing (losos+ogurets or losos+avokado)

We start turning. Thumbs of both hands we raise edge of rug together with chain pump, thus holding with index and middle fingers stuffing. We bend rug at right angle on the line on which the stuffing lies

Accurately we wrap the raised edge of rug together with chain pump and rice down that rice at opposite end faces has adjoined. Further we raise edge of rug and dovorachivay beater that the strip of chain pump, free from rice, adjoined to beater with an overlap

We twist beater in rug and slightly we squeeze hands to condense rice. But do not press too strongly differently and) rice can be stamped too strongly and beaters will turn out tasteless and too sticky, b) the stuffing will get out of end faces

We cut on 6 slices. That rice did not stick to knife, before each cutting we dip edge into water and we overturn knife that drops have run on the cutting edge. We give beaters with ginger, wasabi and soy-bean sauce
