Apple pie with meringueIngredients (for pie of 23x23 cm):
For shortcake dough:
1,5 glasses of flour
125 g of desi
1/2 glasses of sugar
2 vitelluses
For stuffing:
1,5 kg of antonovka (apples)
2/3 glasses of sugar
1/2 teaspoons of cinnamon
3 tablespoons of water
For meringue:
5 proteins
1 glass of sugar
Preparation:
Mix flour with sugar. Lay out desi and chop it on small pieces directly in flour mix. Pound this mix hands to friable crumb. Hammer yolks and continue to knead dough. Roll ready dough and lay out it on bottom of the form laid by paper for pastries densely stamping. Put form with dough in the oven warmed to 180 degrees for 20-25 minutes till slightly brown color.
Clear and small cut apples. In frying pan pour out 3 tablespoons of water and heat. Lay out apples and leave for 3-4 minutes to be extinguished under cover. Then add sugar, mix and leave still to be extinguished to that consistence which prefer - more or less rigid / condition of mashed potatoes. Strew with cinnamon and add if necessary still sugar.
While apples are stewed prigotovt meringue. Beat whites to steady peaks, gradually adding sugar.
Get basis for pie from oven, lay out layer of apples and atop aakuratno lay out meringue. Return to oven (180C) and bake 45-55 more minutes (if proteins start korichnevet too quickly, reduce temperature to 150C) and hold minutes 20.
