Ingredients:
1 chicken on 1,5 kg (8 hips)
1 average bulb
1 carrot
1 sweet red pepper
100 g of green peas (it is possible frozen)
500 g of long-grain rice
100 ml of white dry wine
2 garlic gloves
hot pepper of roar (Chile) to taste
1/2 tsps of ground kumin (zira)
salt, pepper
50 ml of neutral vegetable oil for frying
0,5 l of chicken broth
Preparation:
1. To cut chicken on 8 parts, to puncture each piece in several places with knife, to rub with pounded garlic, to salt, pepper, add zira and hot pepper, to fill in with wine and to pickle 15-30 min. Few times to turn.
2. To dry pieces of chicken paper napkin and to fry in strongly heated vegetable oil in wide pan with thick bottom before formation of ruddy crust. To put on plate and to set aside.
3. To cut vegetables in cubes about 1х1 cm. The frozen peas can be not defrozen.
4. In the same fat where chicken was fried to spasserovat onions and carrots on strong fire, constantly stirring slowly and scratching out from bottom pripekshiysya juice, then to add pepper and in the end peas. Vegetables have to remain slightly crunchy and not get out of shape.
5. To add rice to pan, to mix with vegetables and slightly to fry that it has become impregnated with juice and oil.
6. To lay out pieces of chicken on rice.
7. To fill in with well salted broth so that it closed rice on 1 cm. To bring to the boil, to lower fire to the weakest and to weary, having densely covered, about 30 min. To check readiness of rice. If necessary to add a little broth and to hold on fire of 10 more min.
8. To remove pieces of chicken, carefully to mix rice scapula, taking from bottom. At the bottom it slightly pripechetsya will also grow brown - and has to be.
