Eclairs
Ingredients:
- 1 glass of flour
- 4 eggs
- 125 g of desi
- 1 h. salt spoon
- boiled concentrated milk
- icing sugar
Preparation:
To bring water (1 glass) to the boil, to salt and add desi. After oil to be kindled, gradually to enter flour and intensively to knead, without removing from fire until dough begins to lag behind pan walls. To shift dough in the capacity suitable for beating, and to cool a little. To rub into dough on one egg and to mix the mixer to homogeneous consistence. To lay out dough spoon on the baking tray greased with desi in the form of balls the size it is slightly more than walnut. To bake about 20 minutes at temperature of 190 degrees, then to dry 5 more minutes at temperature of 100 degrees. To fill pastry bag with boiled condensed milk and to fill the cooled-down eclairs with stuffing, having punctured sideways (or from below) small opening. To strew ready eclairs with icing sugar.
