Dried tomatoes

Ingredients:
ripe tomatoes (it is desirable the small size, for example grade of Slivk) - ~ 1-1,5 kg (on one baking tray),
svezhemoloty black pepper or mix of 5 pepper,
coarse salt (it is desirable sea),
dry herbs: rosemary, oregano, etc.,
garlic - 2-3 cloves (or to taste),
olive oil Extra Virgin or refined sunflower oil

Preparation:
It is good to wash up and dry ripe, fleshy tomatoes.
To cut tomatoes on halves or quarters, to cut out fruit stems and to remove seeds from tomatoes (cores can be used tomato for preparation of other dishes, for example, to prepare tomato sauce).

To lay baking tray or lattice parchment paper and to spread out tomatoes (it is necessary to put densely to each other as in process of drying tomatoes will decrease in the amount of).
To salt tomatoes coarse salt and to pepper svezhemoloty pepper.

In each tomato to drip on drop of olive or vegetable oil.
To heat oven to ~ 60-100 °C and to put baking tray with tomatoes in oven (to hold door of oven slightly slightly opened that moisture evaporated quicker).
To dry tomatoes about 5-8 hours, depending on the size (sometimes, it is possible to lower temperature and to include convection).
Ready tomatoes considerably decrease in sizes, remain slightly wet and easily bend. Tomatoes, it is desirable, not to overdry to state dry and fragile, that is to evaporate all moisture from tomato - it is not necessary.
To take out ready tomatoes from oven and to cool.

On bottom of the prepared pure can of the small size to pour a little oil.
Then to put some needles or branch of rosemary (it is possible oregano or other herbs) and the garlic glove cut by petals.
To fill to bank on 1/3 tomatoes, to pour in a little more oil, then again spices, tomatoes and oil.
Thus, alternating, spices with tomatoes and adding gradually oil - to fill to bank.
Slightly to stamp tomatoes, but strongly not to press down them.
To fill in tomatoes with oil so that oil completely covered them (if does not cover - tomatoes will spoil).
To close banks pure covers and to clean on storage in cool, dark place (it is possible to store in the refrigerator).
Tomatoes and oil will be drawn and will develop taste of the added herbs and spices.
Dried tomatoes are stored about 6 months.
It is obligatory to keep the opened jar in the refrigerator.
